For the past 4 days I've been holding back a secret and it has been killing me! But now I'm ready to tell you Monday's good news...

I was so nervous to check my email on Monday that I asked my mom to come visit so she could be by my side as I checked. I'm glad she was there because I was already crying before I checked it. But those tears of fear soon turned into tears of joy when I saw the email subject with the world "successful". And just like that, all my stress and worrying disappeared; my biggest dream for the past 3 years has come true!!!
After we called our family/friends and I was able to dry my tears, we headed out to lunch to celebrate. Our destination: The Springs. Some of you may remember I dined there a few months ago and didn't give it the best review, but I decided to give it another shot.
Since we were celebrating, I had a glass of McManis cabernet sauvignon 2011 with my lunch. I'm not a wine connaisseur, so I won't attempt to give you an amateur description of the wine. I liked it a lot though!
I had the local Wildwood greens with oven-dried tomatoes, red onions, and toasted hemp seeds with a citrus wolfberry dressing to start. It was a pretty standard salad, but those tomatoes made it special - they added some great flavour!
For my entree I had the dish I was contemplating ordering on my last visit: grilled chili-lime Northern Harvest salmon finished with a spiced acacia honey yogurt on top of warm aromatic spiced Israeli couscous. I loved this dish! The fish was cooked perfectly and the flavours in the couscous were delicious. The yogurt sauce was also a really nice complement.
I can officially say that The Springs is redeemed in my eyes and I will definitely be returning again! Not only was the food fantastic, but the service was top notch too. I couldn't have asked for a better celebration lunch!
