Hi everyone!
After you all showed such interest in my meal planning strategy post, I thought I would try to make meal planning posts a weekly feature on the blog. Well, an almost weekly feature. Sometimes I have weeks where I ditch meal planning and just eat a lot of easy stir fries, sandwiches, and eggs.
But last week I had a plan full of awesome meals to share with you! So here is last week's plan, following the template I used in my meal planning strategy post:
FOODS TO USE UP:
Parsley, tofu, tortillas, avocado
MEAL PLAN:
Sunday: Maple-Dijon salmon, wild rice, green beans with toasted almonds and butter
Monday: Adzuki bean and quinoa tabbouleh salad over a bed of massaged kale
Also I just want to point out that I cooked beans from scratch for the first time here. It actually took me two tries because the first batch was so mushy it fell right through my sieve into the sink!
Tuesday: Tofu Sunbutter stir fry served with brown rice
Wednesday: Chicken fajita brown rice bowl with homemade guacamole, homemade pico de gallo and plain Greek yogurt
Thursday: Chicken fajitas with homemade guacamole, homemade pico de gallo and plain Greek yogurt
These were so full that they wouldn't close, so I ended up eating them with a
knife and fork - which I think I liked even better than eating them
with my hands.
Friday: Dinner with friends consisting of a massaged kale salad, orange ginger tofu, and soupy amaranth
Lunches for the week: sandwiches, leftover chickpea burgers from last week, leftover adzuki bean and quinoa tabbouleh salad, and the most amazing squash lasagna with heaps of mozzarella cheese and a side of garlic toast from work!
GROCERY LIST:
Apples, bananas, sweet potatoes, kale, avocado, Brussels sprouts, sweet peppers, tomatoes, cilantro, green onions, garlic, tofu, red wine vinegar, plain 2% Greek yogurt, Bragg liquid aminos.

I'm pretty sure I could look at pictures of your food all day. It always looks so delicious!
ReplyDeleteLunches for me are usually leftovers of some sort. If I don't have any/none that look appealing, I'll eat eggs (assuming I didn't make them for breakfast) or a chicken/veggie burger - I keep a stash in the freezer for that sort of situation.
I love this! Such a great idea to include foods to use up! That's definitely something I need to get better at taking into consideration before I meal plan!

ReplyDeleteMy lunches during the week almost always consist of leftovers from the night before's dinner. I love me some leftovers! :)
ReplyDeleteOkay official: we need to meet someday and have an epic cooking/dinner session. This stuff looks incredible! I especially love the non-closing fajitas - that's the best way to eat them after all :-D I'm also a fan of the adzuki bean salad - not only does it look delicious but mad props for cooking the beans yourself. Usually during the week I cook one big batch of grains (rotating with quinoa, black rice, brown rice, farro, and millet), and one big batch of veggies, and throw them together for lunches with other random additions like leftover chicken breast etc. It works in a pinch! but it does get boring at times..

ReplyDeleteEverything looks so good, Chelsea! Your meal planning strategy enables you to be so resourceful, which is definitely an area where I could use some help. My weekend ended up being much crazier than I'd expected, so I didn't end up putting your tips into practice, but next week it WILL happen. Hold me accountable, please? ;) I may even follow your lead and whip up chicken fajitas, because the picture of yours has induced a major craving! You've also inspired me to make my own guacamole, rather than buying it at Trader Joe's. Fresh is SO much better.

So I've read a few of your roommate tweets and I promise I'm a lot neater than yours sound...does that mean I can come move in and eat with you ;)! I eat burrito bowls a lot during the week especially as their so versatile in terms of the grain and protein options! The best meal I had this past week was probably the fillet mignon I ordered out last week...medium rare and very delicious! As much as I love lean protein, sometimes a girl just needs her red meat ;)!

ReplyDeleteThat's IT!! I'm getting in my fridge this week and writing down a strategy! I love how plan based on what you need to use up...I am the WORST at buying food and then forgetting about it...I had a big and beautiful eggplant that I brought home from the farmer's market a couple of weeks ago....two days ago, I found it in the back of the crisper drawer...we won't talk about the levels of science experiments going on in that thing! Lol
ReplyDeleteDuring the week, my "lunch" is more like breakfast since it's what I eat when I first wake up after my night shift...most of the time, if I'm not working on Sunday's pancake recipe, like today, I'll just throw together a yogurt bowl and call it done. Dinner during the week is almost always a salad just because I never seem to have the time to make anything elaborate...all the more reason to jump on board this meal planning train! :D
That tabbouleh salad looks AMAZING! I was just eyeing some prepared tabbouleh at the grocery store the other day. I flipped it over and checked out the ingredient list and could have slapped myself for even considering shelling out $5 for that little bitty container! It seems so easy...I've got to try my hand at making some soon!
