WIAW #67: Weekly favourites

Hi everyone! How have your weeks been going? I started mine off with class on Monday and then I worked a half day yesterday. I'm starting to get more comfortable at my job and I'm really liking it. I'm used to a lot of structure in previous jobs, so working on something different every day and being able to choose my own schedule is a really refreshing change.

Today for What I Ate Wednesday I thought I'd highlight some of my favourite meals from the week so far:


Favourite breakfast: Oatmeal, as always! Today I made myself this bowl of pumpkin oatmeal with Country Choice Organic multigrain hot cereal with banana, egg whites, chia seeds, granola, raisins, and soy nut butter. With so many different flavour combinations, oatmeal never gets old for me.


Favourite beverage: A cup of Organic Works' decaf coffee while working on some inventory sheets for chef Kat.


Favourite lunch: On Tuesday I got to spend some time in the kitchen doing inventory, and when I saw what they were cooking, I knew I had to get it for lunch (and at half price, baby - the perks of working at a cafe!). It was a lasagna with spaghetti squash and lasagna noodles, sweet potato, spinach, and probably two pounds of cheese - yum! It also came with toast topped with pesto and cheese. This whole meal was amazing. I'm always so impressed with the creative lunch specials that Chef Kat comes up with.


Favourite dinner: On Monday night I made this Quinoa with Brussels Sprouts, Tempeh and Toasted Almonds from one of my favourite cookbooks, Fresh Food Fast. It's a vegetarian cookbook featuring dishes made with real food with a focus on both health and flavour. The author is a culinary school instructor and has won a James Beard Award, so he really knows how to make healthy food taste good.


Favourite snack: These gingerbread date balls that I made - recipe coming soon!


That's it for WIAW - and now I'm off to work for half the day followed by a physio appointment and volunteering. I can't wait until I get home 8 pm when I can just crash on my couch and relax. Have a great day everyone!

  1. Although it's more a case of assembling rather than cooking, I don't think I'll ever tire yogurt bowls. Between the fruit choices and toppings, the combos are endless. My current favorite is yogurt mixed with applesauce, raw oats, bran flakes and peanut butter- yum!

  2. Oatmeal is the same for me!! I love all the stuff I can put in it haha...combine all my favorite ingredients in one big mess with a spoon...delicious every time ;) and can you send some of that lasagne my way?? That sounds heavenly and i would like to eat it too...

  3. You are further convincing me that I need to try that cafe - that lasagna looks amazing! It's so cool how you can pick your own schedule, I think I'd do a lot better with that than your typical 9-5.

  9. I want to jump through the screen and take a bite (or ten!) of every one of these meals! As you already know, oats + nut butter is my favorite breakfast right now. Your bowl looks amazing! I need to try adding a little granola on top--I bet that extra crunch is quite tasty. :)

    The lasagna is making my mouth water!! Can we say YUM?! I waited tables at a restaurant for a year in college, and loved having access to amazing food during my shifts. We'd get one gratis meal each day; I swear it's the only thing that got me through those long hours!

    I'm excited about the gingerbread balls! They look like something that could be sold in your bakery! <3 xoxoxo

Glad to hear that things are going so well with your new job, Chelsea :D With the perks of being surrounded by delicious food all day, I can't imagine it being anything less than amazing - I mean, holy.wow does that lasagna look good. And I love the icing you put on those gingerbread date balls! Your foodie skills are seriously impressive.

    When it comes to meals that I never get sick of, I'm going to have to go with yogurt messes. Toss yogurt, cereal, fruit, and almond butter into a bowl and I'm a happy camper :D

  13. Oh wow, that lasagna looks out of this world! That would probably be my favorite MEAL of the year! Love all the vegetables they stuffed inside!

    I will never ever EVER get sick of pancakes! But I'm sure you already knew I'd say that! ;)

    I don't cook from cookbooks often (I mainly just look at the pictures and drool! Lol), but I used to refer to my old Good Housekeeping cookbook for some classics like buttermilk biscuits and and different chicken dishes!

  16. Your eats look yummy! That would be tough working in a cafe... I'd want to eat everything. That lunch sure looked good! I never seem to get sick of baked kabocha squash filled w/greek yogurt & berries. Always delicious.

  19. OOOOH I can't wait for the gingerbread date ball recipe! I love balls. I also couldn't resist saying that, SORRY! lol. Everything from Organic Works looks amazing...that lasagna? HOLY crap. And even the coffee looks gourmet in the glass mug lol. I hope you're loving that job!

  20. Wow, how do you do your oatmeal with egg whites? Do you put it in the microwave? I seem to be able to make a lot of grilled vegetables with sweet potato :) Any cook books with pictures! I especially love Barfoot Contessa
