    Love the looks of this casserole! Anything even remotely Mexican-flavoured gets my attention instantly. If I can add guacamole to it, I know I'm going to like it.
    And thank you for encouraging the use of full fat cheese - tastes way better anyways!

  3. This looks great! I love casseroles for lazy days! Even better when they are Mexican inspired!
    We've been enjoying way too many sweet treats in my house, so healthy dinners are even more important than usual, to balance everything out!

    My go to lazy meals are anything in the slow cooker; I can throw it together when the kids are napping, and it is ready to go at the end of the day! As for TV show for maarathons, I have to say it would be Friends :)

  6. Mmm, adding this to my lazy day menu haha! It looks fabulous :) My favorite lazy day meals are breakfast for dinner orrrrrrr tomato soup and grilled cheese! Total comfort food with little prep work required!

  7. I've been feeling you on the lazies sure... After all the craziness of Christmas, I haven't felt like doing anything in the least bit productive. Thankfully there have been leftovers to eat, but those are pretty much all gone now so I think it's going to be back to cereal for dinner for me ;) Although I have to say... this casserole sounds SO good. I don't think I've ever actually made a casserole, but I loooove anything Mexican so I'm definitely saving this recipe :)

  11. That taco casserole looks SO good!! And I'm jealous of your lazy bum days! Lately I've gotten hooked on Friday Night Lights on Netflix... Also Mad Men when I have time. How did you like Les Mis??

  13. Yah, I'm totally lazy in the kitchen these days! I need some motivation, but it's just not coming. This casserole sounds super tasty! I need to make this, minus the cheese asap! I can't stand slaving over the stove, so this sounds pretty much perfect. I've been loving the show Once Upon A Time. It's so good!

This looks amazing, I'm going to need a lot of lazy-day dinners when I'm on crutches...cooking something every single night is just not going to happen, esp when it will take like 3x as long haha....this recipe is totally being bookmarked! :-D Oh man I haven't had a lazy day in forever...it sounds so good! I'd totally watch Gossip Girl and Pretty Little Liars all day...Although, I will admit to watching Greek the past few nights out of needin to relax. Trashy mindlessness at its finest! :-D

  17. I've had a major case of the lazies this week, too! Half of the reason is because I was sick, but the other half can be attributed to the fact that I'm home, and want to do nothing more than RELAX. It feels so good! What did you think of Les Mis? I can't wait to see it, but I'm a little concerned about the 2 hour and 40 min. run time!

    This taco casserole looks so delicious. I had a taco craving tonight, so I made kale and sweet potato chip nachos, which turned out really well! I'll have to try this next - I love that it contains brown rice and cheese. :D

    i've had a case of the lazies ever since i got home from school! i have one more week and then i'm headed back - going to take advantage of the last bit of free time and enjoy being lazy :)

  19. Ah, lazy days are the best! There's nothing like a good Scrubs marathon on Netflix whenever the weather is gloomy and I don't feel like moving much. NOT to be confused with being FORCED to be lazy when you're sick for most of the day like this past weekend. I'm just lucky the man-friend takes well to the position of nurse and maker of sick food! Oh and he really knows how to navigate Netflix...I managed to stay awake for 3/4 of the documentary "Hungry For Change" and it was REALLY good! I think I'll be watching it again soon...you know, when I'm not all drugged up and slipping in and out of consciousness! Lol

    Favorite lazy day meal: CROCK POT CHILI! Ten minutes to brown some meat and then I just throw random cans of stuff into the pot...3-4 hours later, dinnah!! :D
