WIAW #22: Fitting it all in

Good morning friends! :)

I know it sounds ridiculous, but I always let out a big sigh of relief after I put up my What I Ate Wednesday post. Taking pictures all day, resizing them, and writing up a post before Wednesday morning can be pretty stressful! Especially when I had an online learning module to complete yesterday as well as some textbook readings and a meeting on campus. But somehow I managed to get it all done - and just in time for WIAW! I started the day off with a new Kashi cereal: Toasted Cinnamon Crisp! I had it with vanilla Greek yogurt, a banana, blueberries, and raspberries.



I was so excited when I was at the grocery store with Meg on Monday night and saw it on display. Even though Cheryl didn't really like it, I needed to try it out anyway! And it's a good thing I did, because I actually loved it! It's crunchy, but mixing it with the yogurt gives it a nice softness. And I LOVE the cinnamon flavour.



When I compared the nutrition facts to the Kashi Honey Almond Flax that I usually buy, after adjusting for serving size I found that it contained less sugar, more protein, more iron, and more zinc. Awesome!

Since I had the morning off from class (because of the online learning module), I decided to use the time to go to the gym. I did an easy 3.25 mile run followed by lots of stretching and some ab exercises. I've decided not to push it with my mileage right now because my knee has been acting up.

For lunch I made my favourite PWO meal: a big carby sandwich filled with healthy tuna salad, spinach, and tomatoes. Plus an apple on the side.



Healthy tuna salad
Serves 2

1 can of solid white tuna in water
1 green onion, chopped
1 stalk of celery, finely diced
3 tbsp plain Greek yogurt
1/2 tsp Dijon mustard
Salt and pepper

I spent the first part of the afternoon doing that online learning module, then had to take a break to go to a meeting on campus. But after 2.5 hours of sitting, I was grateful for the chance to get outside and stretch my legs! I packed some fruit (pineapple, mango, strawberries) and cereal (Quaker Oatmeal Squares, Kellogg's Fibre Plus) to snack on during the meeting.



When I got home after I went straight back to doing that learning module. It took me forever - I didn't finish it until after dinner! Dinner was pretty spectacular though: shrimp and brown rice with cherry tomatoes, cucumber, red onion, avocado, parlsey, feta cheese, lemon juice, and olive oil over a bed of spinach.



After doing even more homework, I finally stopped for the night and made myself a snack of cottage cheese, 2% Oikos vanilla, homemade granola, goji berries, and chia seeds. I enjoyed this while catching up on twitter and blogs. I could have done more homework... but I've got priorities people. ;)



Today's a leg day at the gym, then I have a few chapters to read before my six hour day on campus. Wednesdays are always a long day! I hope it's a good one for you guys. :)

  1. Best thing I ate yesterday had to be breakfast or my late night snack - i can't decide! Although both of those meals tend to be my favorite!

  2. You have to try tuna(or chicken salad) with avocado mixed in- SO yummy! I love eating breakfast after my workouts, especially yogurt bowls with raw oats, fruit, almonds and honey! Lately I've been craving protein like it's my job so I always have some egg-whites on the side!

    Best thing I ate yesterday was definitely a crepe made from organic buckwheat flour filled with tomato coulis, mozarella, arugula and mushrooms! The icing on the cake was definitely the fro yo for post-dinner dessert!

  3. I have been meaning to try the new Kashi cereal. I am not a huge cinnamon fan so I doubt it will take the favorite spot of Honey Almond Flax.

  4. I love that new kashi too!! It's got such a great flavor :) Your tuna salad sandwich looks yummy too!
    I always like having smoothies after working out-- I get really queasy when I have solid stuff, so I just blend it all up instead heehee

  5. Generally after finishing the workout I'm craving something cold like a massive smoothie in a bowl with cereal. However sometimes in the winter the smoothie craving doesn't hit as hard and I enjoy an omelette and toast :) All your pics look great! :)

  7. I haven't seen that new Kashi! I HAVE seen a new Kashi GoLEAN Crisp, but haven't tried that either. I HAVE, however, discovered the joy of Multigrain Peanut Butter Cheerios..."discovered" to the point of obsession. :)

  10. I still haven't seen the new Kashi cereal! I've really been loving the original GoLean though.

    Your fruit salad looks delicious! Strawberries, mango and pineapple are a few of my favorites!

  12. I am not allowing myself to buy any new products until I run out of some of the ones I do have haha. As soon as I am out, I am trying this one!
    Good job on listening to your body and doing a shorter run, it's better not to annoy your knee more!

Since I ate basically the whole box of the cinnamon stuff I deemed "too sweet" over the course of the last 2 days (gahhhh, this is stressing me out right now), I don't know if I'm happy or anxious about the fact that they're selling it over here too! I thought it was an American only thing (and was planning a trip to stock up...jk jk!).

    Good girl for listening to your body and your knee! Check your glute activation and strength. The physio said it's really common and that if you ever have pain esp on the outside of your knee, it's likely coming from a weak bum bum bum!

  21. I am a huge fan of Kashi cereals, and was so excited when I heard they came out with a new flavor. I still haven't tried it though! I need to get myself to a grocery store and stock up ASAP!

  22. Your tuna salad looks delicious. I love making tuna with dijon and yogurt instead of mayo - it tastes so much fresher that way! My favorite thing to eat after a workout is a nice big salad, with lots of healthy fats and protein on it - nuts, avocado, beans... oh, and cheese, of course ;)

  23. I haven't tried the new Kashi, but I'm eating the :classic" right now. I like to mush PB up in it, sprinkle with cinnamon, and drown it in almond milk.

  24. I LOVE carbs after a hard workout. Today I had creamy stuffed french toast with berries on top. YUM! I've made tuna salad with hummus before and it was amazing...give it a try.
