WIAW #21: Falling back on familiarity

Hi guys! Happy What I Ate Wednesday! Today I've got six hours of class from 2:30 until 8:30 pm that I'm dreading - I'm always falling asleep by the time 8 pm rolls around! I can't wait until I can come home after that, curl up on the couch with some tea, and read everyone's WIAW posts. It's something I look forward to every week. :)



As I mentioned in my last post, this week I've been trying out one of my New Year's resolutions to plan my meals for the week. I've been doing pretty well with it, but yesterday I just needed a break. I've been trying out tons of new recipes lately and yesterday all I wanted was to cook some easy, familiar, boring foods. And so I did.

I started off my morning with a big bowl of pumpkin banana oatmeal (cooked with milk, chia seeds, cinnamon and pumpkin pie spice) topped with granola, soy nut butter and pumpkin butter.



It may be boring and predictable, but it never gets any less tasty!

I had class from 8:30 until 11:30 and then lunch, which was another favourite of mine: a sandwich with hummus, avocado, cucumber, carrot, sprouts and tomato, with an apple on the side. Sometimes I find myself eating this same lunch 3-4 times per week!



I let it digest for an hour then went to spin class. I was hesitant about going at first because my legs were a little stiff, but spinning always loosens them out for me. Once my legs were feeling good, it was a great class!

When I got home I refueled with a smoothie using Meg's recipe. The only changes I made were using frozen instead of fresh blueberries, milk instead of almond milk, and kale instead of spinach. It turned out so nice and thick!



Smoothies never keep me full for long though, so I was starving by 5 pm. I had stuffed peppers on my menu plan for the night, but I wanted something faster, so instead I just made a good old tofu and veggie stir fry with my sunflower seed butter sauce.



After doing some readings, watching Glee, and reading some blogs, I made myself my go-to night time snack of vanilla Greek yogurt, pumpkin, cinnamon, pumpkin pie spice, and granola. Unfortunately the usual pleasure of eating this snack was ruined by some seriously funky tasting yogurt. Eww! I had to eat some pineapple after to get the taste out of my mouth!



I guess that means I won't be eating yogurt as planned for breakfast this morning... so I'm off to whip myself up a batch of pancakes! I hope you all have a great Wednesday!

  1. Old is definitely gold! So long as you’re not fed up of them, nothing wrong with falling back on them every so often! Love the sound of that sandwich- I just bought some avocado and am already looking forward to a turkey & avocado sandwich for lunch tomorrow :)!

  2. Pumpkin oats never get old in my book. I can't wait to curl up tonight to watch Glee recorded on my DVR. Good luck in your long day of class.

  3. I agree with Lindsay, pumpkin oats always work for me, and also sweet potatoes... cooked pretty much anyway! Good luck with your classes today, sounds like an awfully long day, ugh!

  5. That veggies stir fry looks amazing! Some of my favorites that I fall back on are yogurt/cereal messes, tuna salad, or just simple chicken and veggies heehee Gotta love the ol standbys!

  8. I always find myself eating the same thing over and over again! However, I do NOT think your oats sound boring at all...to be honest, I've been eating plain oatmeal mixed just with flax and oat bran and a sprinkle of cinnamon lately...it's REALLY boring, but somehow just what I want. :)

  13. Okay, so I think this is gonna go through.. IPhone saves the day! I can't imagine being in class all day. That sounds rough, but reading all the WIAWs after that will be nice. My fall back foods are Greek yogurt messes, Mexican inspired salads, and pb and j. I've been livig off of Mexican inspired salads lately though so that has been getting boring!

  14. I haven't had a sandwich with avocado in so long...actually I haven't had a sandwich in a really long time. Hm...I think that's what I'll have for dinner. Thanks for the inspiration :)

  15. I'm totally a cereal (LOL) meal repeater. Especially at school. It's SO EASY to find something tasty and allergy-approved, then just eat it for the next.. Month? Then I'll get off it for a while, and then go back sometime later. Your eats look AWESOME! Sorry about the yogurt. :( I can't believe you have class until 830!! I would fall asleep.

  17. Funky yogurt freaks me out. I'm one of those people that's always smelling milk to see if it really is still good... and then I'm unable to decide if it is funky or of it's in my head. :)
