WIAW #20: Back to school edition

Hey guys! I haven't been posting much about my personal life on here lately - so just to catch you up: I'm now back at school after my three week break at home. I can't say it was easy leaving my family - I've become so much closer to them in the past few years and I really enjoy being home with them now, so it was hard to leave.

But meeting up with Meg for a tea date, seeing some school friends, and making exciting plans for the semester has helped to cheer me up. And also What I Ate Wednesday always puts a smile on my face. Yesterday for breakfast I tried out a new product: Go Go Quinoa 4 grain hot cereal. For Canadian readers, I picked it up in the food section of Home Sense. It has amazing deals on organic and natural foods!



The cereal contains amaranth flakes, quinoa flakes, buckwheat porridge, and chia seeds. Thanks to these healthy ingredients, it has stellar nutritional stats: 50 g has 170 calories and contains 6 g of fibre, 7 g of protein, 20% of your daily value for iron and 10% for magnesium. Pretty awesome, no?



I cooked it in milk and water and added some extra chia seeds, cinnamon and banana while cooking. Then I topped it with more banana, blueberries, soy nut butter and homemade granola.

I made this batch of homemade granola on Monday using my recipe for honey almond coconut granola - it's my favourite!



After breakfast I headed out to my 8:30 class for Food Production Management - it's a requirement for my degree, even though I want to be an R.D. not a food service manager! Oh well, hopefully it'll be somewhat interesting.

Class ended early so I went to the bookstore to buy some more textbook (my wallet is crying!) then went to the cafe at the gym to do some readings and eat my lunch:



Leftovers from this recipe from Fitness Magazine for quinoa salad with chicken. I loved the crunch of the apples and the hint of mint in this salad!

Then I went to a 1:05 spin class taught by Gail. She was awesome and she was really fun to chat with after class. I've decided to start making more of an effort to talk with fitness instructors - they can provide such helpful advice!

When I got home I was ravenous so I made myself a snack that was big enough to be more like a mini meal - pumpkin, vanilla 2% Oikos yogurt, cottage cheese, cinnamon, pumpkin pie spice and homemade granola.



It tided me over until dinner, which was homemade turkey pasta sauce with spaghetti squash. Homemade sauce takes a while to make, but it is so worth it! I like to freeze it in small amounts so that I can have it for a few weeks for fast dinners - that way I never have to rely on the jarred kind!



After dinner my friend came over for a bit, and then I spent the rest of the night relaxing with some blog reading, tea and one of my spiced sweet potato muffins that I found lurking at the back of my freezer. I forgot those were there, so that was a nice surprise!

What's one thing that you always make yourself and refuse to buy from the store? For me it's definitely pasta sauce!

  1. Glad you're back in a routine at school again! I refuse to buy pasta sauce as well - I can "taste the jar" if that makes any sense at all.

  2. I really want to try that breakfast cereal! It looks yummy and healthy. Isn't it funny what you can find in the food aisles of Home Sense and Winners? That's where I got my Kodiak Cake pancake mix. Unfortunately, items aren't consistent and I haven't seen any since.

  3. I would LOVE to copy that pumpkin post-workout snack!

    I'm trying really hard to think of something I will not buy from a store...smoothies? I have a lot of friends who love those bolthouse farms ones...not me! I also won't buy baked cookies. Even if I buy a mix and make it, I'd rather have a hand in it than buying some from the grocery store bakery!

    Lately, I've been refusing to buy protein bars from stores and just make them at home, it's so fun to experiment with new flavors and ingredients!

  8. I love making my own granola. So many flavor combos to choose from. I made an almond granola the other day - perfect with some greek yogurt.

  9. Oh, I love homemade pasta sauce. SInce my food processor broke I can't really have it anymore :( I have to relay on wf 365 organic, which is still pretty good for a jarred sauce.
