WIAW #19: Food without thought

Good evening guys! It's been so hard to keep track of What I Ate Wednesday over the holidays - I almost forgot about it 2 weeks ago, I forgot about it last week, and I almost forgot about it again this week. I'm glad I remembered though because I love taking part in the WIAW fun!



As a foodie, I usually put a lot of thought into all my meals. Today that wasn't the case. Instead I just threw together whatever sounded good to me at the last minute. It was kind of nice to not have to think so much about my food today!

This morning I found out that my mom and sister were planning on going to the gym at 8 am... and I found this out at 7:40. So I whipped up this breakfast of vanilla Greek yogurt, Kashi Honey Almond Flax, banana, and berries and scarfed it down in 15 minutes. I hate exercising without eating breakfast first because I get so hungry during my workout when I do it on an empty stomach.



After a 4 mile run + 15 minutes of incline walking at the gym, I came home and stretched while watching Mairlyn Smith (author of Healthy Starts Here!) on CityLine. She made these breakfast cookies that look delicious!

For lunch I threw together a bunch of leftovers: grilled chicken, baked acorn squash, quinoa, and my sun dried tomato and parmesan kale salad. I love it when I have the perfect combination of leftovers in the fridge! I topped it all off with a honey balsamic dressing to tie it all together.



After lunch we had to drop my sister off at the airport to go back to Halifax. I miss her already. :( I can't wait until we're both home again in February for reading week.

When we got back I had a new-to-me snack: half a thin bagel topped with soy nut butter and banana. I love having a whole real (ie. not the thin kind) bagel with banana and soy nut butter for a meal, but I never thought of it as a snack. Half a thin bagel makes the perfect sized snack!



For dinner my mom and I made this soy glazed arctic char from the December issue of Canadian Living along with wild rice and roasted vegetables. We decided on the side dishes at the last minute at the grocery store - when we saw the heirloom carrots on display we knew we wanted to give them a try, so we roasted them with Brussels sprouts and beets.



Tonight I'm probably going to snack on this banana bread that I'm bringing to my friend's house for a night of hot tubbing and board games.



It's the moistest healthy banana bread that I've ever made. Recipe to come soon!

Do spend a lot of time thinking out your meals or do you just figure them out at the last minute?

  1. I always think out my food. Even if I'm going out to eat I'll look at the menu before hand and everything haha. I just like having things to look forward to. I love roasting broccoli, with lots of salt! All your eats look delicious! Can't wait for the banana bread recipe :)

  3. Can I just say your meals are beyond amazing? Like seriously, your WIAW's always ALWAYS make me drool!! :D
    I spend time thinking about my meals, I guess I like to know what to expect. If I didn't pre-plan, I have a feeling I'd be a wild baboon in my fridge haha

  5. Your eats look great Chelsea, and with so little little thought put into them... that takes talent! Your lunch is a good combination of healthy and filling ingredients too, I should try something like that for lunch soon
    I am getting better at just eating on a whim, and it has helped me understand more of what I am really and truly craving!

  6. The best thing I ate today was a piece of toast with a bit of butter and raspberry jelly. Either that says I really really like toast...or my day was pretty boring. I'd go with both!

    Sometimes I try and plan meals in ahead, but I tend to cook from what I'm craving at the moment or what my body is asking for.

I sometimes spend a lot of time thinking about my meals and whether they contain the appropriate nutrient amounts for that day, etc. The other day I wanted to have my cereal with milk, but I thought that maybe I should eat it with greek yogurt for the protein. I asked my mom what she thought, and she said "Just eat whatever you feel like"... it was like I had a revelation hahah

  8. I wing it. Intuitive Eating works for me because I have learned to focus on what I am really hungry for and make that happen. Sometimes I feel bad for buying so many groceries for one person BUT I try to make them work with what I'm hungry for and I figure it's better to be satisfied than to be sticking to some pre-planned meal plan ALL the time!

    I made curry today in my crock pot. It was SO good and a new recipe that I tailored into my own (http://eatplayluvblog.com/2012/01/04/curry-in-anything-but-a-hurry/).

    Your food looks delicious, especially the banana bread. Come back to London. I have no hot tub but we can play board games! ;)

    PS Guess what's in my fridge? ...kale.

  9. Your eats look delicious! I normally plan away but I've started going more with the flow and eating what I crave..unsurprisingly, I am enjoying my meals a lot more! I am yet to find a veggie I don't enjoy roasted but butternut squash is probably my #1! Also I totally feel you about being starving at the gym! I didn't think I needed my usual snack so I skipped it this morning...yup the tummy grumbles found me mid-workout!

  11. I agree, as a foodie and a food blogger I do put a lot of though into my meals sometimes. But other times, I just throw something together. :)

    I would like to try soy nut butter too, but i haven't seen it in my country.

    I spend lots of time thinking about what to eat, but at the end i still have the same thing as always...

  15. Sometimes the most random and quick eats are the best. I feel like I truly go with what I am craving when that happens! I've been craving banana bread like mad lately, so I can't wait for the recipe!!

    The best thing I ate today was a dark chocolate covered hazelnut toffee bite. Oh my gosh, deeelicious!!
