I had been planning on having Greek yogurt for breakfast, but when I discovered the night before that my last tub of Greek yogurt had gone bad (well before the expiry date!), I had to toss it, leaving me Greek yogurt-less.
Oatmeal was out of the question too because my bananas weren't quite ripe enough. Call me crazy, but for me, bananas have different uses at each of their stages of ripeness. For example, ripe bananas are used for oatmeal whereas less ripe bananas are eaten with cereal + milk or yogurt + granola. Please tell me I'm not the only one who thinks that?!
So with oatmeal and yogurt + granola out of the question, pancakes stepped up and came to the rescue. And I came up with an awesome recipe!

Fluffy cottage cheese pancakes
Serves 1
2 tbsp oats
1/4 cup whole wheat flour
1/4 tsp baking powder
Shake of cinnamon
1/4 cup egg whites
1/4 cup cottage cheese
1/4 tsp vanilla
Combine the oats, flour, baking powder and cinnamon in a medium bowl and stir. Then add in the wet ingredients and mix until just combined.
Spray a pan with cooking oil and let it heat up. Scoop the batter into the pan to form 3 pancakes. Cook until the tops start to bubble, then flip and cook until done.

I layered mine with banana and topped them with drippy soy nut butter, blueberries, and coconut. Perfection!

I'm like this with greek yogurt too! It used to be cottage cheese for me though! I also like to have cheese around and egg whites, even though I can't remember the last time I ate egg whites...I'm always throwing them away.
ReplyDeleteBananas are definitely on a continuum. I don't like them until they start to "go"...and then I like them in cereal when they're firm, oatmeal next, and smoothies finally. I have gotten into the habit of freezing em for my green monsters now (but I used to freeze them for banana bread!).
I usually take a long time to eat my egg whites too! I used to just keep the opened container in my fridge for weeks... until I realized it says you're supposed to use them within 7 days of opening. Whoops! I go through them a lot faster now that I add them to my oatmeal though.

And I couldn't agree more with ripeness of bananas-- I ONLY like them when they're super green. For some reason when they're all brown and mushy I get super skeeved out, so my mom usually eats them haha

ReplyDeleteHaha girl I feel you on the yogurt- I start panicking when I’m down to my last container! And also about the bananas- you make me feel normal again :)! You’re going to think I’m loco but at home we buy Iceberg lettuce and Lollo Rosso lettuce! If I’m having a ‘fun’ salad (i.e. with loads of toppings), I’ll use iceberg, but if it’s just a regular garden salad, I’ll use the lollo rosso- don’t ask!
